Chocolate Chip Loaf


  • 1/2 Cup Caster Sugar
  • 1 Cup Flour
  • 1 teaspoon Baking Powder
  • 4 Tablespoons Corn Flour
  • 115gm Butter
  • 2 Eggs
  • 1 Teaspoon Vanilla
  • 1 Tablespoon Lemon Juice
  • 3 Tablespoons Chocolate Chips


  1. Preheat oven to 180ºC
  2. Grease and line a loaf tin
  3. Sprinkle 1 Tablespoon of the Caster Sugar into the tin and tilt to distribute the sugar around the tin
  4. Shake out any excess
  5. Sift the flour, baking powder and cornflour into a bowl
  6. Cream butter and sugar until light and fluffy
  7. Add eggs, one at a time, beating after each addition
  8. Gently fold in the dry ingredients, do not over mix
  9. Fold in the vanilla, lemon and chocolate chips. The recipe says 3 Tablespoons, but I would add more
  10. Pour the mixture into the tin and bake for 45-50min
  11. Cool in the tin for 5 minutes before removing
  12. Dust with icing sugar to serve
