Cupcakes Galore

Everyone who knows me, knows I have a love of baking and all things sweet. I have made cupcakes for my family for many many years now, but it’s been on a ‘need’ basis for the likes of school lunches, birthdays and other special occasions. However, like many things that we love to do, we start to experiment with different recipes, different flavours, and suddenly the norm, just doesn’t cut it any more.
I found a recipe that I love (the red velvet cupcake recipe that features on our website) and found that it is just so easy to adapt to whatever you want. Leave out the raspberry flavouring and the red food colouring and you have the basis for cupcakes that can become all things wonderful. Add 2 tablespoons of cocoa and around 1/4 cup of extra buttermilk, if you want chocolate cupcakes, or just don’t add any colouring but put extra vanilla in if you want a nice simple cupcake that will go with almost anything. For me the Heilala Vanilla is just the best vanilla out there, but my cupboard doesn’t often stock it unfortunately so a basic vanilla essence will do just as well and fits the tight budget that much easier.
The cupcakes themselves are a nice light texture and they last a fair while in the pantry if you have a household that doesn’t scoff them as soon as they’re out of the oven.  And once again, the options really are limitless on what you can do with them.

Now comes time for the ‘wow’ factor!!!

I have recently discovered something that has simply knocked my socks off …….. LorAnn Oils

flavours

These are quite simply AMAZING. If you want to have cupcakes that look and taste like they have been bought from a cake shop, then these products are for you.

Although the bottles are tiny, you only use a couple of drops so what seems like a small amount, it will last you for many cupcake batches. And the flavours are just spectacular.
The first couple I bought were the Maple, the Pineapple (my favourite so far), the Tutti Frutti, and the Strawberry Kiwi. I made up some cupcakes and away we went.

From left to right
Pineapple Lump – Chocolate cupcake, Pineapple Frosting and a Pineapple Lump to finish
Raspberry – We didn’t have the raspberry oil for these so used a normal flavouring but topped it with vanilla frosting and freeze dried Raspberry from Fresh As.
Strawberry Kiwi – Basic Cupcake with Strawberry Kiwi Frosting
Tutti-Frutti – Basic Cupcake with Tutti-Frutti Frosting and a Tutti-Frutti Jellybean

Red Velvet Cupcake Recipe

These oils are available in most cake decorating shops around NZ so I’m sure you’ll have no problem finding any.  There are so many different flavours, that there is going to be more than one favourite flavour for everyone, however I am picking you will be like me and end up with several favourites
They retail for around the $3.00-$3.50 mark for a 3.7 ml bottle, but I have also seen bigger bottles for around the $12.00 – $14.00 although haven’t ‘yet’ purchased one.

For those of you who are in Hamilton, you can purchase them from the amazing Cake & Kitchen, who have an awesome selection of flavours for you to choose from, and who will be more than happy to help you out. Situated in Claudelands they’re easy to find and as well as the oils, they have such a great selection of party goodies that you’ll be like a kid in a candy shop.
