Feijoa Cake


  • 125 grams butter (soft)
  • 3/4 cup sugar
  • 2 eggs
  • 2 cups of mashed Feijoa pulp
  • 1 teaspoon Baking Soda
  • 2 Tablespoons hot Milk
  • 2 Cups Plain Flour
  • 1 teaspoon Baking Powder


  1. Cream butter and sugar until it looks light
  2. Add eggs and beat well
  3. Add the mashed Feijoa Pulp and mix
  4. Once the milk has been heated, put the Baking Soda into the milk and stir
  5. Add the milk/baking soda to the mix
  6. Sift in the Flour and Baking Powder and mix until combined
  7. Pour into a 20cm lined cake tin and bake at 180° Celsius for around 50 minutes
  8. Test by touching cake, when it springs back when lightly touched, it's cooked
  9. Ice with Cream Cheese icing
